If you’ve been studying my weblog for awhile, you recognize I’m a vast fan of cauliflower rice. As evidenced through the Pineapple Fried Cauli Rice HERE, the Cauli Rice Tabouleh I made HERE, and the Cauli Rice Paella I made HERE. See what I’m saying? Now it’s time to convey within the salmon.

While I’ve at all times grated or processed my very own cauli rice, I decided to provide Whole Foods Market’s pre grated rice a shot this week and pair it up with a few Coho Salmon I picked up for his or her One Day Sale. I can basically discuss for myself whilst I say I at all times make a large number processing it myself.

I’m leaning toward the reality that’s simply due to the very fact I’m a hot mess within the kitchen, but regardless it at all times will get everywhere. So it was refreshing to simply be capable to open the package deal deal and have recent (not frozen) cauli rice prepared for me. And yes, I nonetheless made a large number with it, but no longer almost as massive of one!

I needed to created anything easy yet nonetheless flavorful and delicious to pair with the salmon so I went the regular route of recent herbs and lemon. Because helloooo, all of us recognize recent salmon, herbs and lemon are BFFS. And now, you’ll find a way to upload cauli rice into their circle of friends. Pan Roasted Salmon and Lemon Herb Cauliflower Rice from the Whole Smiths. Takes 30 minutes and is paleo friendly, Whole30 compliant and gluten free. A must-Pin!

Roasted salmon served along recent cauliflower rice. Loaded with herbs and lemon.
4-6 king salmon fillets
1 Tbsp ghee at room temp
1 onion chopped
6 cloves of garlic chopped
1/4 C. chopped parsley
1 Tbsp. chopped chives
1 Tbsp. Chopped dill + 1 Tsp.
8 C. cauliflower rice
1/3 C. toasted pine nuts
1 lemon zested
2 C. bird broth
Salt + Lemon pepper to taste

Preheat oven to 425*
Coat salmon fillets with ghee
Salt and pepper fillets generously & coat with 1 Tsp. of the chives and a little bit of lemon zest
Lightly grease a forged iron skillet and location salmon inside. Set aside
In a medium skillet warmth 1 Tbsp. of ghee
Once oil is hot upload chopped onion and prepare dinner till tender, salt as needed
Once onion is smooth upload garlic and prepare dinner till fragrant, about 2 minutes
Add further 1 Tbsp of ghee to pan and upload cauliflower rice
Toss to mix and coat
Add NULL cups of bird broth to pan and increase warmth to high
Continue to prepare dinner till broth boils off and rice is smooth but no longer soggy
Drain further liquid in necessary
Once cauli rice is smooth upload all herbs, lemon zest, juice from 1/2 lemon and pinenuts
Salt and pepper to taste
Toss to mix and allow sit on low warmth for 10 minutes
Meanwhile Add skillet of salmon to oven and bake for 10-15 minutes depending on thickness of cut
Pull out and serve salmon over cauliflower rice
