One-Pot Creamy Spinach Lentils in a red dutch oven.

This creamy spinach lentil recipe is virtually simply too excellent for those final few cold days of spring. Thick and satisfying with truly mellow, warm, earthy flavors, plus drizzled with just somewhat bit of olive oil and a touch of red wine vinegar simply due to the fact Jamie Oliver says you’ll just like the twang (twang! haha. twang.) –> quite certain those rustic creamy spinach lentils are about to bear hug your lentil-loving soul.
Easily, they’re a few of the greatest lentils I’ve ever made.

One-Pot Creamy Spinach Lentils in a bowl with spoon.

One-Pot Creamy Spinach Lentils – SO GOOD! Made with plenty of veggies and a potato-thickened broth base to grasp all of it together.
2 tablespoons butter, oil, or (wait for it) bacon grease
half a yellow onion, diced
2 carrots, peeled and chopped
2 sticks celery, chopped
1/2 cup dry white wine
2 cups raw lentils, rinsed
2 medium Yukon potatoes, chopped (about 1 cup total)
4 cups hen broth (plan so as to feature a number of additional cups as wanted whereas cooking)
1 bay leaf
a few sprigs recent parsley
a few springs recent thyme
1/2 cup half and half
3–4 cups packed recent child spinach
salt and pepper to style (be beneficiant with the salt!)
olive oil and red wine vinegar for topping
Heat the bacon grease (that’s what I used) over medium heat. Add the onions, carrots, and celery. Saute for 10 minutes till the vegetables are well and roasty and fragrant. Add the wine slowly – it have to supply just somewhat sizzle and get all of the browned bits off the bottom.
Add the lentils, potatoes, and broth. Tie the bay leaf, parsley, and thyme collectively and toss within the pot (the cause for tying is so that you’ll be able to simply take away them on the cease – I in actual fact wrapped mine up in a stalk of celery so it could be contained somewhat better). Simmer for 30-45 minutes, stirring occasionally, including additional broth as crucial so the lentils are simply slightly protected in liquid. When the lentils and potatoes are soft, gently mash the potatoes in opposition to the area of the pot with the again of the wood spoon to make the combination creamy.
Remove the tied herbs; upload the half and half and spinach. Stir to incorporate. Season with salt and pepper (season, taste, adjust, repeat). Serve every serving with a drizzle of well olive oil and a touch of red wine vinegar, per Jamie Oliver’s (and my) recommendation.
The cooking size for the lentils (and the quantity of liquid you need) will partially count on how vintage your lentils are. Mine were round for a while… so they took about 6-7 cups of broth over about 45 minutes of cooking time. Just play it by means of means of ear and do what feels proper if it seems adore it desires additional liquid and additional time.
