Many, a long time ago, California Pizza Kitchen (CPK) used to be a favourite of mine. It was my mother and my mother-daughter “date night” spot.

We’d seize dinner at CPK after which store or move to the movies. Of course, instances have replaced and at the uncommon social gathering that date nighttime time is an option, I choose Dan to be my date and we have a tendency to widespread smaller, cozier, veg-friendlier establishments.

But a few weeks ago, whereas we have been out on a Container Store run with my mom, we grabbed lunch at a CPK I literally hadn’t been to in 15 years.

It reminded me of vintage instances and conjured up testimonies of spilling all of the newest boy drama to my mother whereas residence from faculty for summer time break. If merely I’d recognized Dan was within the pipeline… I’d (probably) have chilled out a bit.

It also introduced up testimonies of a salad my mother and I used to split. A tremendous green, crisp salad with a nutty sesame dressing, little cucumber rounds, and chicken. I trust it’s nonetheless at the menu all those years later. Either way, the mere reminiscence of it impressed me to create a veggie-foward vegan version.

And so, right the following it is. I’m calling it the Nutty Green Veggie Crunch Salad. Because it’s PACKED with all of the inexperienced veggies, tremendous nutty, and highly crisp and crunchy.

Then, practice the nutty sesame dressing. Which, edge note, I ought to devour via the spoonful.

Whisk collectively creamy peanut butter (or sunflower butter to make it nut-free), natural maple syrup, tamari, rice vinegar, and toasted sesame oil.

Once the dressing is ready, pour it over the salad and toss to coat. This dressing is fairly thick and clings to the veggies highly well.

*I use frozen shelled edamame. If you do that too, simply be certain to thaw it earlier than adding!
**I used typical Tamari. If you use reduced-sodium, you will desire to growth the quantity (maybe to 2 tablespoons or so). Also, when you do no longer have to hold this salad gluten-free, you will be able to replace soy sauce for the tamari.
