It has taken me all week to detect this, but I’ve unintentionally shared rather plenty of salad recipes. First up was this potato salad, then this spicy corn salad, and now today’s fancy balsamic bird cobb salad. Granted, those salads are all very, very different, but three salads in a single week is rather plenty for me.
Maybe it has anything to do with this LA vibe I’m lately soaking in proper now? After all, LA is the land of all issues salad and inexperienced juice. Oddly though, I’ve been consuming rather plenty of pizza and tacos and have had zero salads. Unless you rely the chopped salad from Monday nighttime time that protected three other types of Italian meats and NULL pizzas…

I also threw in some avocado, simply due to the fact seemingly I can’t make a salad with out adding avocado. I’d say sorry, but the truth is I’m not. I love me some avocado…
Finished the salad off with a fundamental balsamic vinaigrette and done.

Loaded with marinated grilled chicken, candy balsamic vinaigrette, plenty of contemporary greens, tomatoes, bacon, difficult boiled eggs, avocado and slightly cheese, this balsamic grilled bird cobb salad is nothing quick of awesome. Perfect for summer time lunches, dinners or packed up and brought at the go.
2 boneless skinless bird breasts
2 tablespoons additional virgin olive oil
1 tablespoon contemporary chopped thyme
1 tablespoon contemporary chopped oregano
1 tablespoon contemporary chopped dill
2 teaspoons smoked paprika
1 tablespoon lemon zest and juice
Kosher salt and pepper
6 cups contemporary greens, akin to romaine
1 cup cherry tomatoes, halved if large
4 ounces gorgonzola cheese, crumbled
1 avocado, sliced
6 strips crispy bacon, crumbled
4 difficult boiled eggs, sliced
1/4 cup additional virgin olive oil
1/4 cup balsamic vinegar
2 tablespoons contemporary chopped basil
2 teaspoons dijon mustard
Kosher salt and pepper
1 pinch beaten red pepper flakes
1. Add the bird to a bowl and toss with the olive oil, thyme, oregano, dill, paprika, lemon zest and juice, and a pinch each of salt and pepper.
2. Preheat your grill, grill pan or forged iron skillet to medium excessive and brush the grates with oil.
3. Grill the bird for 5-8 minutes per edge or till the bird is cooked through. Remove from the grill and allow relaxation 5-10 minutes. Thinly slice the chicken.
4. In a big salad bowl, combine the greens, tomatoes, and gorgonzola. Top the salad with avocado, chicken, bacon, and eggs. Serve the salad alongside the balsamic vinaigrette (below).
