Hey howdy and Happy weekend! AKA the NULL days out of the week we get to dwell up late, sleep in, and stuff ourselves foolish with breakfast food. Also, pizza and Netflix… in sweatpants.

But this weekend isn’t just any usual weekend! Because tomorrow is Mother’s Day!!! And though I’ve already shared with you 18 superior recipes certain to make mother swoon, I couldn’t resist popping in to tempt you one extra time.


Don’t you assume mother might just love to wake as a lot as an enormous stack of blueberry waffles… protected in blueberry sauce… with truly quite nice coffee… and a mimosa… served to her in bed… on a adorable little tray with flowers? I’m just variety of spitballing here, but I assume ALL of that sounds quite great.

But I digress! Back to the waffles. I’ve been short of to make Greek yogurt waffles forever, and final weekend the playing cards lastly aligned. With a bath of virtually expired Greek yogurt sitting within the fridge, NULL kilos of blueberries resting at the counter, and a local jug of maple syrup giving me a wink of encouragement, I knew it was time to take dream to reality.


After a NULL fails and a fair quantity of frustration (waffle fails are the worst), those beauties had been born: Greek Yogurt Blueberry Waffles with Fresh Blueberry Sauce! Crispy, fluffy, and exploding with blueberries… every chunk is nirvana.


How to Make Blueberry Sauce

The recent blueberry syrup is so simple and so delicious!!!


It’s made with blueberries, orange juice, maple syrup, and only a contact of cornstarch. You’ll merely combine those meals in a saucepan and boil till thickened. That’s it!!!


I won’t be the least bit shocked if after tasting it you desire to drizzle it in your oatmeal, ice cream, pancakes, cookies, brownies, blondies, boyfriend… ←wait, what!? Kidding with that final one (or am I…?!). Just checking to see who’s nonetheless paying attention

Greek Yogurt Blueberry Waffles with Fresh Blueberry Sauce
Ingredients
Greek Yogurt Blueberry Waffles:
2 cups all-purpose flour
2 and 1/2 teaspoons baking powder
1/2 teaspoon salt
3 Tablespoons granulated sugar
1 and 1/4 cups entire milk
3/4 cup full-fat Greek yogurt
3 big eggs, at room temperature
1/4 cup unsalted butter, melted
1 cup recent or frozen blueberries, if utilizing frozen, don’t thaw first


Fresh Blueberry Sauce:
1 cup recent or frozen blueberries, if utilizing frozen, don’t thaw first
1/3 cup orange juice, divided
2 tablespoons maple syrup
1/2 tablespoon cornstarch


Instructions
Greek Yogurt Blueberry Waffles:


In a big bowl, combine the flour, baking powder salt. and sugar; set aside. In a separate big bowl, whisk collectively the milk, yogurt, eggs, and butter; stir into dry meals just till moistened. Fold in blueberries.
Using a 3/4 cup measuring cup, scoop batter, and pour onto a preheated waffle iron. Cook till waffle is browned and crispy at the outside, about 5 minutes. Repeat with remaining batter.
Meanwhile, make your recent blueberry sauce.
Fresh Blueberry Sauce:


In a small saucepan, positioned over medium-heat, upload the blueberries, 3 tablespoons of the orange juice and all the maple syrup. Bring to a boil. In a small bowl combine cornstarch and remaining orange juice and whisk till smooth; regularly stir into berry mixture. Bring again to a boil and cook, stirring constantly, for about 2 minutes, or till thickened. Serve warm with waffles.
