Vegan #Pineapple #Fried #Rice #(Gluten-Free)


Vegan Pineapple Fried Rice ~ sweet, savory and spicy! So easy to make and takes 30 minutes on the stove. It's gluten-free too!


Ingredients

  • 1 cup Carrots
  • 1/4 cup Cilantro
  • 3 cloves Garlic
  • 1 tbsp Ginger, fresh
  • 1/2 cup Green onion
  • 1/2 cup Peas, frozen
  • 1 1/2 cups Pineapple chunks, fresh or canned
  • 1 Red onion, small
Condiments
  • 3 tbsp Tamari, gluten-free
Pasta & Grains
  • 3 cups Rice, cooked
Baking & Spices
  • 1 1/2 tsp Curry powder
  • 1/2 tsp Red pepper
Oils & Vinegars
  • 2 tbsp Coconut oil
Nuts & Seeds
  • 1/2 cup Cashews, roasted
