10 ounces bow tie pasta
2 Tablespoons olive oil
2 cups frozen corn
3/4 cup mayonnaise
4 ounces Cotija cheese, crumbled
2 Tablespoons lime juice
1/3 cup recent cilantro (finely chopped)
2 Tablespoons red onion (finely chopped)
2 teaspoons minced garlic
1/2 teaspoon chili powder
1 teaspoon jalapeno pepper (chopped and optional)
Cook pasta according to directions on package. Set apart to cool.
