One #Pot #Spinach #Rice


Healthy spinach rice loaded with proteins, fibers and vitamins. It is a one pot meal that takes about 30 min to prepare. Ideal for busy times.

  • 2 cups Baby spinach, fresh
  • 2 cloves Garlic
  • 1 Onion, medium
  • 1 cup Pinto beans, canned
  • 2 Tomatoes
Canned Goods
  • 2 cup Chicken stock, low sodium
Pasta & Grains
  • 1 cup White rice
Baking & Spices
  • 1 1/2 tsp Curry powder
  • 1 Salt and pepper
Oils & Vinegars
  • 1 tsp Avocado oil or other cooking oil
