ingredients
for the salad
1/2 cup dry quinoa, rinsed well
1 cup water
1 (15 ounce) can chickpeas, tired and rinsed
1 tablespoon avocado or olive oil
1/2 teaspoon coarse salt
5 ounces child spinach leaves
1 broad tomato, cored, seeded, and cut into chunks
for the dressing
1 avocado
3–5 basil leaves (depending on their size)
1 small garlic clove, minced
2 tablespoons lemon juice
a pinch or NULL of salt
water (1/4-1 cup)


instructions
Put the quinoa and water in a small saucepan and deliver to a boil. Reduce the heat, cover, and prepare dinner till the water is absorbed, about 15 minutes.
