This healthy one-pot enchilada pasta is quick, easy, and ready to rock your plate! Vegetarian and gluten-free, this healthy one pot pasta makes an easy + delicious dinner!

  • 1 Cilantro and/or green onion, Fresh
  • 1 cup Corn, frozen
  • 1 Jalapeno
  • 1 Serve with lime
  • 1 Tomato
  • 1 cup Tomatoes
Canned Goods
  • 1/2 cup Refried beans
  • 2 cups Vegetable broth
Pasta & Grains
  • 8 oz Chickapea pasta
Baking & Spices
  • 1 tsp Chili powder
  • 1 Salt and pepper
Nuts & Seeds
  • 1 tsp Cumin
Dairy
  • 4 oz Cheese, grated
  • 1 Greek yogurt or sour cream, Plain
Prepared
  • 2 1/2 cups Enchilada sauce, red homemade or store-bought
